Job Description

Elio provides a social dining experience featuring contemporary Mexican cuisine in partnership with Enrique Olvera & Daniela Soto-Innes from the acclaimed restaurants Pujol and Cosme, who in 2019 were awarded No.12 and No. 23 respectively on the World’s 50 Best Restaurants list.

Job Purpose:

The General Manager is responsible for overseeing the daily operations of the restaurant and ensure that we uphold the high expectations of the Olvera and Wynn brands while delivering an unparalleled guest experience. The General Manager is responsible for developing and maintaining the culture of the restaurant while exceeding the financial objectives set by key stakeholders.

Key Responsibilities:

Daily Operations

  • Develop and implement an innovative business strategy to maximize revenue, manage expenses, and increase staff productivity
  • Manage the research, development, and implementation of new ideas (products, service techniques, environmental additions) to ensure the venue remains competitive and relevant
  • Monitors fiscal budgets and the long-term development of the operation, regarding revenue, costs, hourly labor and other expenses, in accordance with Wynn Las Vegas standards
  • Provide clear and effective communication between key stakeholders and restaurant partners

Guest Services

  • Identify and anticipate guest needs and expectations, while fulfilling the Wynn Brand Values
  • Be knowledgeable in all facets of the work environment (hotel, other departments, etc) to ensure all guest inquiries are handled properly
  • Address all guests’ requests (verbal, on-line, etc) and effectively resolve comments in a timely manner
  • Provide personalized service to media and VIP guests, ensuring all pertinent departments in the resort are aware of these individuals and their notes
  • Works closely with Wynn Nightlife and ensure their guests are given the ultimate Elio experience

People Management and Training

  • Provide supervision, direction, and leadership to the management team/staff to achieve and exceed department goals
  • Coach, motivate, counsel and evaluate management staff and encourage their participation in decision-making
  • Aid in training, and development for both managers and line-level positions
Job Requirements
  • Requires a minimum of five years of experience in a similar supervisory position within a social/high volume restaurant
  • Must be fluent in both English and Spanish
  • Must be social media savvy
  • Maintain a clean and professional appearance, adhering to the Wynn standards
  • Previous P&L ownership in a financially successful food & beverage operation
  • Experience with Mexican food & beverage operations would be an advantage
  • Experience with managing employees under a Collective Bargaining Agreement is preferred
